Role Overview

We are hiring an experienced Production Manager to lead injera production for export markets. This role is primarily focused on injera (not catering or local retail production). The ideal candidate has hands-on experience preparing injera specifically for export, with strong knowledge of food additives, preservation methods, and quality control.
This is a non-negotiable requirement: candidates must have direct experience producing injera for export.

Key Responsibilities

• Manage end-to-end injera production for export markets 
• Oversee fermentation, baking, cooling, packaging, and storage processes 
• Apply and manage approved food additives and preservatives correctly 
• Ensure consistent quality, taste, texture, and shelf-life 
• Maintain strict hygiene, sanitation, and food safety standards 
• Implement and monitor SOPs for export-grade production 
• Train and supervise production staff 
• Work closely with management on production planning and scaling 
• Assist with spice production oversight when needed

Mandatory Requirements (Non-Negotiable)

• Proven experience producing injera for export 
• Strong knowledge of food additives and preservatives used in injera 
• Prior experience in a production manager or senior production role 
• Deep understanding of fermentation, shelf-life extension, and quality control 
• Ability to document processes and follow strict standards

Candidates without export-level injera experience will not be considered.

Assets (Nice to Have) 

• Background in food science, food technology, or a related field
• Experience with export compliance and food safety standards 
• Leadership experience managing production teams
